My take on Jambalaya. Super delicious and filling. If I'm prepping this one for later cooking, I do brown the sausage ahead. The shrimp doesn't get added until your ready to serve, toss it in, turn up the heat and cook the shrimp through. If you want to do this stove top, I find that it's best simmering for a few hours. My version of Penne Caprese... I add chicken, it's pretty simple. 1 large diced onion, 1 can of diced tomatoes , a table spoon of chopped garlic, and 3 chicken breasts, cubed. Toss in the crockpot, 6 hours low. Toss with cooked penne (I did use rigatoni because that's what was in the pantry) and shredded mozzarella and parmigiana cheese. Happy eating!#FoodFairy

This was literally "what's in the pantry" food prep... Chunky jalapeño chicken brought to you by my fried brain... It was REALLY good... Toss everything together, cook for 6 hours on low.
