My version of Penne Caprese... I add chicken, it's pretty simple. 1 large diced onion, 1 can of diced tomatoes , a table spoon of chopped garlic, and 3 chicken breasts, cubed. Toss in the crockpot, 6 hours low. Toss with cooked penne (I did use rigatoni because that's what was in the pantry) and shredded mozzarella and parmigiana cheese. Happy eating!#FoodFairy
