Easy Chicken Chili


EASY chicken chili!!!

One of my go to, happy kid meals, this is a staple in my freezer, and easy to vary (switch up the beans, use ground, add tomatoes)  Chili is great because there are NO rules!  This particular batch is super simple.  Chicken breast, cubed, a bag of frozen corn, black beans, cumin, salt, pepper, and diced chili peppers... I'm feeding a family of 4, and like to have left overs for lunch.  

about 3 lbs chicken breast, cubed into bite size pieces
1 1lb bag of frozen corn
1 can black beans
1 small can diced chilis OR 2 jalapeno peppers, seeded and diced (freeze them, easier to cut, less oils on your fingers because OUCH) 
1 tsp cumin
salt and pepper to taste
freeze ahead (for cooking later)

Crock-pot 6 hours low, serve over rice, topped with shredded cheese and sour cream.  Happy eating!
